Bone Pizza Dough

Friday night pizza dough recipe coming at ya.

Tools

  • Stand mixer

Ingredients

  • Hot water (200 ml)
  • Traditional Yeast (3/4 tsp)
This is the brand and type I use, easy to find in Canada (keep in the fridge after opening, lasts a while)
  • 1.5 tsp extra virgin olive oil
  • All Purpose Flour (1 cup + 1 tbsp + 2 tsp)
  • *Tipo 00 Flour (1 cup + 1 tbsp)
  • Kosher Salt (1 tsp)

* Note: can find Tipo flour in any Italian shop and most grocery stores

Method

  1. Prepare at least a day in advance of making the pizza
  2. Add yeast to hot water in a bowl and let stand for 10 mins until yeast begins to bloom, then add olive oil
  3. Combine dry ingredients in stand mixing bowl
  4. Add wet ingredients to the dry and mix with paddle until incorporated, then rest for 10 minutes
  5. Replace paddle with dough hook and mix for 10 minutes
  6. Put in an airtight container and place in fridge overnight, can be used in the next couple days or put in the freezer for later use

Making the Pizza

Suggest using a pizza stone, preheated in your oven as hot as it gets without using your broil setting. Stretch the dough out on a lightly floured pizza peel and add whatever the hell you want on your pizza. Slide the pizza onto your hot stone and bake for 5-9 minutes depending on how hot your oven gets.
